Anzac biscuit...in a mug!

To get into the turning of the season, what better baked good to have then an ANZAC biscuit. Oats like the warm porridge of breakfasts before school, coconut like the coat that hugs a lamington, and a bit of syrup to remind you of pancakes gobbled. 

Try this out when you're at a camp kitchen, in your campervan, your cabin or even at home. You need just a few basic ingredients, a microwave, and a love for treats. 

ANZAC Biscuit Cake In A Mug Recipe

Serves: 1 Mug Cake

Prep Time: 2-3 minutes

Cook Time: 2 minutes

Ingredients:

1 tablespoon of golden or maple syrup
1/4 teaspoon salt
1/2 tablespoon melted butter
3 tablespoons milk (long life will do!)
1/4 teaspoon baking powder
1/2 cup of quick oats
1 tablespoon shredded coconut

Instructions:

Take a large mug, and mix the melted butter and the syrup together. Pour in the oats, baking powder and the milk (and maybe a teaspoon of water). If you're interested in adding a bit of twist to the flavour, add a touch of cinnamon to give it that really warm feel. Microwave for 2 minutes and done! You have yourself an ANZAC biscuit set to eat in a mug.
